With 4th of July this week, I thought I would share a very simple recipe to take with you to the fireworks show or neighborhood cook out!
When I think of 4th of July, I think of apples. (Well, maybe hotdogs, beer, and watermelon). OK, so everyone thinks about food. Hence apples=food.
Anyways, I found this on pinterest and modified it a little. This was a super easy recipe to whip up and it goes great with ice cream! It travels well to the lake and cookouts! So have at it!
Here's my take on it:
- 5 cups apples. Cored and cut into chunks.
- 1 c. sugar
- 1/3 cup applesauce
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1 1/2 cups flour
- 1 1/4 tsp baking soda
- 1 1/2 tsp ground cinnamon
- ice cream to serve with
Preheat oven to 350F. Grease a 9X13 baking pan. Chop apples into small pieces and combine with sugar in a large bowl.
Stir until evenly mixed, set aside. Combine applesauce, eggs, and vanilla in small bowl.
In another large bowl, sift together flour, baking soda and cinnamon.
Combine egg and flour mixtures until evenly distributed, then slowly add to apples. Stir until well mixed. Spread mixture evenly into prepared baking pan.
Bake 25-30 min or until crisp is getting slightly brown. Serve warm with ice cream and Enjoy!
