Oreo Cupcakes (or how to make professional looking cupcakes without the professional stuff)

This week I went back to work, and y'all it is K.I.L.L.I.N.G. me!! 

I love teaching but it's so hard to go back after 9 weeks off.  To top it off, I switched grade levels and moved rooms, so I'm feeling a little discombobulated as well!

One of the ways I like to deal with stress is bake. I don't know what it is about it, but it might have to do with eating a tasty treat when I'm done. (Yes, I eat when I stress. Super healthy habit I know!)

I decided to whip up a little somethin', somethin' with stuff we had it our cabinets. 

Any my was it delicious! 


I used 1 box of chocolate cake mix, 1 container of vanilla frosting, and about 15 Oreos. 

To start, I follow the directions on the cake mix.

Only pour the baking cups about 1/3 full.


I've switched over to using silicone baking cups that you can purchase here.

That's one of my secrets for perfect cupcakes. They're more expensive up front (about $8 for 12) but you never have to buy those paper liners again so it's greener. Also, I swear the cupcakes are moister in these! 

The reason why you're filling the cupcakes only about 1/3 full with batter is because we're going to put a little surprise in the middle. 

Take a plastic bag and put 2 scoops of icing in it. Cut off the corner and squeeze some icing into each cup. Make sure the icing only stays in the middle of the cups. 

Then pour the remaining batter over the top, and make sure all the middle is covered. Bake as directed on the box.

After they've cooled, again put icing into the bag with the cut off tip, and pipe on the cupcakes. See you can have professional looking cupcakes without the cost! 

I crushed half the Oreos and sprinkled them on top.

The other half of the Oreos I cut in half and placed those on the top.
YUMMY!
Now I think I'll go stress eat :)

I couldn't believe it when I saw the school buses running their practice routes the other day, and today both the elementary and middle schools had meet your teacher days, so traffic around here was awful! So thankful I get a couple extra weeks with my college bound freshmen. Those cupcakes look so good! Low cal, right ;)
